Bridie’s Apple Sponge

Apple sponge

Ingredients:

2 cups(450g) Odlums self rasing flour
1 cup(225g)caster sugar
3 eggs
175g/6oz Margarine
1/2 teaspoon salt
4-5 peeled apples,chopped into large chunks
1 Birds Custard

Method:

1. Beat margarine and sugar together.
2. Add the eggs, one at a time, beating well after each addition.
3. Stir in the sieved flour, salt and cinnamon, if used.
4. Roughly chop apples and stir into the mixture.
5. Place into a greased and base lined 900g/2lb loaf tin. Slice the remaining half apple into thin circles and arrange on top of mixture.
6. Bake in a pre-heated oven at 190°C/375°F/Gas 5 for 30 minutes approx.
7. Allow to stand in tin for about 5 minutes, then turn onto a wire tray to cool.
8. Serve warm with Custard or ice cream!
