Light Fruit Cake
Ingredients:
1lb. Cream Flour
Pinch Salt
4oz Sultanas
1/2 teaspoon of Baking Powder
6oz of sugar
6 oz Irish Butter
3 Eggs
2oz Mixed Peel
2oz Cherries
Method:
1. Sieve Flour, salt and baking powder in to a bowl.
2. Beat butter and sugar together for 5 to 10 minutes to a cream.
3. Add eggs one at a time and continue to beat.
4. Fold in Sultanas, Mixed peel and Cherries. Mix well.
5.Fold in the Flour mixture
6. Turn in to a greased and lined 8 inch tin
7. Bake in the center of oven ( 350°F) for 75 – 90 minutes.
8. Check cake at intervals after 60 minutes.
9. Let cake cool a little in tin then stand on a wire tray. Cover with tea towel
