Gingersnap & Jam Parfait
Ingredients:
250 grams of raspberry jam
3 tbs lemon juice
140 ml sour cream
180 ml of heavy whipping cream
50 grams of sugar
3/4 tsp vanilla
1/4 tsp ground cardamom
1/4 tsp ground ginger
8 gingersnaps biscuits, crushed
Method:
1. Whisk together jam and lemon juice and set aside.
2. Beat the sour cream, cream, sugar, vanilla, cardamom and ginger until stiff peaks form.
3. Layer about 1 tablespoon whipped cream mixture, 1 tablespoons crushed gingersnap biscuits and 1 tablespoon of jam.
4. Repeat and top with a dollop of whipped cream.
