Irish Stew with dumplings
Ingredients:
450g cubed stewing beef or lamb
1 tbsp vegetable oil
1 clove of garlic
1 large onion, chopped
4 medium potatoes, peeled and chopped
4 carrots, peeled and chopped – or 2 carrots and 2 parsnips, peeled and chopped
1 packet of Knorr Country Stew Mix
570 ml water
1 packet of Golden Fry Dumpling Mix
Salt and Pepper
Serves 4
Method:
1. In a large pot, stirfry the onion and garlic until golden. Add the beef/lamb and fry until browned.
2. Add the carrots, parsnips and potatoes. Mix the Knorr Country Stew Mix with water and add to the pot. Bring to the boil, stirring constantly. Add more water if necessary.
3. Cover and simmer very gently, stirring occasionally for 1 1/2 – 2 hours or until the meat is tender.
4. 20 minutes before the stew is done, prepare the Dumplings.
Empty the contents of the Golden Fry Dumpling Mix into a bowl. Add 75 ml of cold water. Mix together firmly with a fork. Divide the mixture into 6-8 dumplings and form into balls with floured fingers.
5. Add the dumplings into the stew 20 minutes before its done, while it is still simmering and continue to cook for 20-30 minutes.
For crustier dumplings, bake in the stew in an oven, uncovered.
6. Serve the stew and dumplings hot from the pot, seasoned with salt and pepper for a delicious heart warming meal on a cold winter’s day.
Although it is a very traditional Irish dish, there is no strict method for creating an Irish Stew. Feel free to be creative and add your own personal touch, by adding a variety of vegetables or using a mixture of meats.
