Mediterranean Egg White Sandwich

Ingredients:

  1. 2 slices Brennas Wholemeal bread
  2. 2 Egg Whites
  3. Cracked Pepper
  4. One slice Slow-Roasted Tomato
  5. Lakeshore Strong Mustard
  6. Cheddar Cheese
  7. Butter
  8. Small handful Baby Spinach

Method:

    1. 1. Lightly broil one slice of bread with the cheese in the toaster oven if desired.

 

    1. 2. Meanwhile, spray a microwave-safe ramekin generously with cooking spray.

 

    1. 3. Pour egg whites into the dish and cover. Microwave for 45-60 seconds, depending on your microwave.

 

    1. 4. Place the tomato slice on top of the cooked egg and nuke it for 10 more seconds (to get the chill of the refrigerator off).

 

    1. 5. Place cooked egg and tomato on top of cheese-covered slice of bread.

 

    1. 6. Top with a sprinkle of fresh-cracked pepper.

 

    1. 7. Spread the mustard on the second slice of bread.

 

    8. Place a small handful of baby spinach on top of the tomato, put your breakfast sandwich together and enjoy!
