
Mediterranean Egg White Sandwich
This is a convenient and healthy option to start your mornings!
Ingredients:
- 2 slices Brennas Wholemeal bread
- 2 Egg Whites
- Cracked Pepper
- One slice Slow-Roasted Tomato
- Lakeshore Strong Mustard
- Cheddar Cheese
- Butter
- Small handful Baby Spinach
Method:

- 1. Lightly broil one slice of bread with the cheese in the toaster oven if desired.

- 2. Meanwhile, spray a microwave-safe ramekin generously with cooking spray.

- 3. Pour egg whites into the dish and cover. Microwave for 45-60 seconds, depending on your microwave.

- 4. Place the tomato slice on top of the cooked egg and nuke it for 10 more seconds (to get the chill of the refrigerator off).

- 5. Place cooked egg and tomato on top of cheese-covered slice of bread.

- 6. Top with a sprinkle of fresh-cracked pepper.

- 7. Spread the mustard on the second slice of bread.
- 8. Place a small handful of baby spinach on top of the tomato, put your breakfast sandwich together and enjoy!
