Smoked Salmon English Muffin with Scrambled Eggs

Ingredients
2 english muffins
Smoked Salmon
4 eggs
Butter
Black pepper
Salt
Chopped chives
Method
1. Split the english muffins in half and toast.
2. Place the eggs in a medium bowl and beat with a fork until broken up. Season with a pinch each of salt and pepper and beat to incorporate.
3. Heat a nonstick frying pan over medium-low heat until hot, about 2 minutes. Add the butter to the pan and, using a rubber spatula, swirl until it’s melted and foamy and the pan is evenly coated. Pour in the eggs and sprinkle with 1 tablespoon of the chives. Cook eggs for 2 minutes, until scrambled.
4. Spread thin layer of butter on each muffin half.
5. Divide scrambled eggs evenly over english muffins and top with a slice of smoked salmon.
6. Garnish with remaining chives and serve warm.
