
Irish Oatmeal Tea Cake
Ingredients
1lb mixed dried fruit (sultanas, raisins, currants, mixed peel)
0.75 pint strong cold tea
4oz Flahavan’s progress oatlets
8oz brown sugar
4oz chopped walnuts
2 eggs beaten with 2 tbsp. of milk
12oz self-raising flour
Method
1. Prepare the fruit by soaking in the cold tea with the sugar and oatlets overnight.
2. Preheat the oven to Gas Mark 3.
3. Stir the remaining ingredients into the soaked fruit mixture.
4. Turn the mixture into 2 x 2lb lined or greased loaf tins and bake in the center of the oven for about 75 minutes until golden brown and springy to the touch.
5. Cool on a wire rack.
6. Slice and serve with butter.
